1 bunchcilantro
6scallions
trimmed and halved
4.5 quartswater
2 cupsdry sherry
or mirin
4 inchfresh ginger
piece
3 tablespoonskosher salt
4scallions
thinly sliced on bias
3 tablespoonssoy sauce
2 tablespoonsvegetable oil
4 teaspoonsfresh ginger
finely grated
1 tablespoonunseasoned rice vinegar
1 tablespoontoasted sesame oil
½ teaspoonwhite sugar
0.5 poundnapa cabbage
white rice
cooked, to serve
Instructions
Step 1
Boil the broth then simmer at barely a boil for 15 mins then flip the chicken and cook another 10 mins.
Step 2
Turn off heat and let sit in the broth for 30 minutes.
Step 3
Transfer the chicken to a carving board and rest for 15 mins
Step 4
While the chicken rests, prepare the dressing
