Mazesoba inspired pasta (Maze-spaghetti)
Inspired by Mazesoba (creamy soba noodles), here’s my version using spaghetti instead.

Ingredients

Ground beef mixture
500gground beef
1 x 160gcan minced prawns in spices
optional
2 Tbspsweet soy sauce
1 Tbspminced garlic
olive oil
or avocado
Spicy cucumber salad
1cucumber
shredded
1 tspsalt
1 tspmonk fruit sweetener
or sugar
1 Tbspsushi vinegar
1 Tbspsesame oil
1 Tbspspicy chilli crisp

Instructions
Step 1
Bring a pot of water to boil, then add spaghetti and cook on simmer for 7 minutes till al dente
Step 2
Drain spaghetti and set aside
Step 3
In the meantime, prepare beef mixture. Heat oil in pan, then add garlic to sauté till fragrant
Step 4
Add ground beef and cook till brown
Step 5
Add can of minced prawns in spices for extra flavour (optional) or substitute with 2 tbsp oyster sauce
Step 6
Season with sweet soy sauce and simmer for 1 min
Step 7
Next, prepare cucumber salad by mixing all ingredients with shredded cucumber, then set aside
Step 8
Prepare poached egg: bring a small pot to boil and add 1 tbsp vinegar. Strain 1 raw egg in mesh, lower heat then swirl water in pot (to create vortex). Gently add egg to boiled water and swirl in water for 1 min
Assemble noodles

Placed cooked spaghetti in bowl
Step 10
Add beef mixture, cucumber salad, dried squid side dish (optional), spring onions and poached egg
Step 11
Mix well and enjoy
