Fresh Baked Rhubarb Lemon Bars - Foodness Gracious

Instructions

Step 1
Preheat the oven to 350 degrees.
Step 2
Lightly butter a 13 x 9inch baking pan and line with parchment paper leaving some hanging over the side.
Step 3
Using a stand mixer combine the flour, powdered sugar, and soft butter until it comes together.
Step 4
Press into prepared baking pan evenly up to the sides.
Step 5
Bake in the oven for 20 minutes.
Step 6
Slice the rhubarb into three pieces and then slice them into thin strips to lay across the top of the lemon bar. Set aside while you make the filling.
Step 7
Whisk together the eggs, sugar, lemon juice, flour and baking powder until smooth.
Step 8
Stir in the lemon zest and pour the mixture into the baked crust.
Step 9
Carefully lay strips of the rhubarb in three rows on top of the filling keeping them close to one another. They'll move around but that's okay.
Step 10
Gently transfer the completed pan to the oven and bake for another 25 minutes.
Step 11
Let the lemon bar cool before slicing and then dust with more powdered sugar if desired.
