Crispy Chicken Nuggets, Mess Free, Real Chicken | Air Fryer Nuggets

Today, I want to share one of my kid's favorite recipes: Chicken Nuggets. The real deal—meaning only chicken, no weird stuff. Crispy outside, tender inside, not fried, with simple ingredients, juicy, and absolutely delicious. Just make them, and you'll fall in love, just as we have. Instructions

Step 1
Cut your chicken into small, evenly sized pieces to ensure even cooking.
Step 2
To brine the chicken, combine enough water to cover all the nuggets, a rounded spoonful of salt, and another one of sugar in a bowl. Let it brine for 15 minutes.
Step 3
After the brining time, pat the chicken dry to remove excess water.
Step 4
In another bowl, whisk together eggs, Cassava flour, garlic powder, onion powder, salt, and pepper until well combined.
Step 5
Add the chicken pieces to the egg mixture and coat them thoroughly with a spoon.
Step 6
Panko can be a bit coarse, so we recommend using a Ziploc bag and a kitchen tool, such as a rolling pin, a kitchen mallet, or even a stone, like the one I use, to crush them down into fine breadcrumbs. Once done, add the Panko breadcrumbs to another bowl, and using a skimmer spoon or other utensil, such as tongs, transfer the coated nuggets to the bowl with the Panko breadcrumbs, ensuring there's no excess batter.
Step 7
Cover the bowl with a plate and shake well to distribute the Panko evenly and cover all the nuggets with it.
Step 8
Place all the nuggets in a single layer on a platter or cooling rack to chill for about 30 minutes in the refrigerator. This cooling time will help the layers of breading ingredients solidify and adhere better after the chicken cooks.
Step 9
Once chilled, place the desired amount of coated nuggets in the air fryer tray, spray some olive oil on top, and cook them at 400°F for 7 minutes. Carefully flip them over with tongs and cook for an additional 7 minutes. Remember, air fryers and ovens work differently, so adjust cooking times accordingly if necessary.
Step 10
Freeze the rest for later in a container or Ziploc bag for later.
