Creamy Lemon Gnocchi with Crispy Prawns 🍋

INGREDIENTS:
500g gnocchi
1 cup of frozen peas
1 handful of prawns
2 heaped tbsp of cream cheese
Juice of half a lemon
.
METHOD:
Add the gnocchi and the peas to a saucepan of boiling water and cook until the gnocchi rises to the top. Reserve a little cooking water, then drain and add back to the saucepan.
Fry the prawns in hot oil or a little butter until crispy.
Add the prawns to the gnocchi and peas along with the cream cheese, lemon juice and reserved cooking water.
Give it a good mix until combined, season if you wish and that’s it!

Serve!
This is a meal you can have on the table in under 10 minutes - it’s filling, comforting and easy. The prawns can be swapped for crispy bacon if you prefer or chopped sundried tomato to make it vegetarian.
