Step 1
Boil a kettle
Step 2
Cut tenderstem broccoli into thirds. Peel and grate the garlic.
Step 3
Pour water into saucepan with salt and bring to the boil. Add rigatoni and cook 12 minutes.
Step 4
Heat drizzle of oil on medium heat. Add cajun spice and garlic for 30 secs.
Step 5
Stir in the passata, red wine stock, tomato paste, sugar and water. Simmer for 4-5 mins.
Step 6
When the rigatoni has been cooking for ~8 mins, add the tenderstem broccoli. Drain and stir in olive oil to prevent sticking.
Step 7
Add butter to the sauce, add spinach for 1-2 minutes. Season with salt and pepper.
Step 8
Stir the cooked pasta, broccoli, peas and 3/4 cheese into the sauce. Heat until peas are piping hot.
Step 9
Share between bowls and top with remaining cheese.
