Instructions
Step 1
Spray inside of slow cooker with vegetable oil spray.
Step 2
Microwave tomato paste, oil, paprika and garam marsala stirring occasionally, for 1 minute, transfer to slow cooker.
Step 3
Stir in broth, chickpeas, wine and tapioca.
Step 4
Season chicken with salt and pepper, nestle in slow cooker.
Step 5
Cover and cook on low, 3-4 hours.
Step 6
Shred chicken.
Step 7
Stir in apricots.
Step 8
Cover and let sit 5 minutes
Step 9
Season with salt and pepper to taste.
Step 10
Serve over couscous.
