A versatile and colorful chicken salad to eat with toast or as a filling in chicken bakes

Ingredients

Chopped cooked

soy sauce

mustard

mayonnaise

chipotle

Instructions
Step 1
Boil chicken breast. Tip: adding a little soy sauce during this step removes any “gamey” flavors
Step 2
Chop chicken into small pieces and set aside
Step 3
In a large mixing bowl, add all other ingredients finely chopped and mix together. Tip: for a lighter option you use less mayo and add some sour cream
Step 4
Mix in the chopped chicken and keep covered in fridge until ready to use. You can eat in a sandwich or use it as a filling in crescent bake (optional egg wash + sesame seeds if you go this route)
