Rotisserie chicken pasta salad
Yes I’m a rotisserie Stan. The best meal prep hack for eating more protein…..? Rotisserie chickens.
Recipe makes 4 salad jars, I only have 3 pictures here!
Ingredients
1 rotisserie chicken, skin removed, I used the white meat only but you can use the brown as well.
1 box of protein pasta I used
1 European cucumber, diced
1 cup cherry tomatoes, halved
2 cups romaine lettuce
Dressing:
2/3 cup nonfat Greek yogurt (I used
)
2 tbsp ranch seasoning (I just used a ranch dip packet)
Unsweetened almond milk to thin
Instructions:
1. Prepare pasta according to package instructions. Drain and rinse and set aside to cool.
2. While pasta cooks, remove skin from rotisserie chicken and remove meat from the bone, diced into bite sized pieces.
3. Chop your veggies and side aside. In a small bowl whisk together dressing ingredients, adding almond milk slowly until you reach a smooth consistency, I like mine a little on the thick side.
4. Evenly distribute amongst 4 jars, starting with dressing then layering with cucumber, tomato, chicken, pasta, and romaine.
5. Store in the fridge for up to 4 days!
