Corn cob paprika snack
A sensational side dish that you need in your life. Tomato and jerk corn ribs with a spring onion mayo 🌽😍
- 2 sweetcorn cobs
- 1 tbsp vegan mayo
- 1/2 tbsp chopped spring onion
For the paste:
- 1 tbsp tomato paste
- 1 garlic clove, minced
- 2 tbsp olive oil
- 2 tsp jerk seasoning
- 1 tsp maple syrup
Cut your corn by gently placing a knife on the top whilst standing it straight, use a rolling pin to slowly bash the knife down, guiding it as you go down the middle. Take your time as the core is hard to cut.
Mix together the ingredients for the paste and brush on the corn ribs. Cook in the oven at 200C for 40 mins, until slightly charred and curled.
Serve with the spring onion mayo if you wish and enjoy!
