Burghul A Banadoura (Bulgur cooked with Tomato, is an easy-to-do and tasty Lebanese dish made of bulgur, tomatoes and onions. A treat for vegetarians. You can serve plain yogurt next to it.

Instructions

Step 1
In a medium saucepan, heat up the olive oil, add the onion and sauté for a few minutes on medium heat until the onion is translucent.
Step 2
Add the garlic and stir it for 1 minute, then stir in the diced tomato, diced chili pepper and sauté until it has completely softened, about 3-4 minutes.
Step 3
Rinse the bulgur 2-3 times and add the washed bulgur to the onion/tomato mixture.
Step 4
Increase the heat and add the chicken stock (Vegetable stock if you want the dish to be vegan/vegetarian) followed by the tomato paste, let boil for 2 to 3 minutes.
Step 5
Lower the heat to low, let it simmer for 20 minutes with the lid on until the bulgur is well cooked. (more water if necessary), then remove from heat and allow it to rest for 10 min.
Step 6
Add in a drizzle of olive oil and give it a quick mix, and serve it warm with a light salad or plain yogurt.
