DAY 1 of VEGANUARY | Biscoff & banana meal prep baked oats 🤎 I experiment with variations of these allll the time, but they also happen to be vegan so I thought what better way to kick off Veganuary!! One dish wonder & the most delicious breakfast meal prep idea to set yourself up with non-boring grab and go brekkies for the week ahead 🫶 Makes 3-5 servings (appetite dependent): ▫️ 200g rolled oats ▫️ 2 bananas, plus extra to decorate ▫️ 60g salted caramel soy protein ▫️ 420ml water/almond milk ▫️ 1 tsp baking powder ▫️ 1 tsp cinnamon ▫️ 3 lotus biscuits ▫️ 1 tbsp biscoff, melted 👩‍🍳 just assemble as shown, bake in the oven (180 degrees) for 35-40 mins and you’re good to go! I like to serve mine up with yoghurt and a drizzle of biscoff. Simply store the rest in the fridge and either microwave your portion when you want it for 1 min, or have cold for an oat bar vibe. ENJOY 🤍 . . . . . .
