Instructions

Step 1
Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease with cooking spray.
Step 2
Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness using a meat mallet or rolling pin. Season both sides of the chicken breasts with salt and pepper.
Step 3
Lay two slices of bacon side by side on a flat surface, slightly overlapping. Place a few asparagus spears at one end of the bacon slices and sprinkle some shredded mozzarella cheese on top of the asparagus.
Step 4
Roll the chicken breast tightly over the asparagus and cheese, using the bacon slices to wrap around the chicken. Secure the ends with toothpicks if needed. Repeat with the remaining chicken breasts.
Step 5
In a small bowl, mix together the olive oil, minced garlic, dried thyme, and paprika.
Step 6
Place the stuffed chicken breasts in the prepared baking dish. Brush each chicken breast with the olive oil mixture, ensuring they are evenly coated.
Step 7
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
Step 8
Once cooked, remove the toothpicks from the chicken breasts. Sprinkle with chopped fresh parsley for garnish before serving.
Step 9
Serve the Asparagus and Bacon Stuffed Chicken Breast hot, accompanied by your favorite side dishes.
