Pork Belly with Daikon

【Recipe】Here’s another great braise dish that we can cook for our family. Using basic ingredients, shallots, garlic & salted soy beans to flavour the dish. Slow braising to bring out the sweetness of the pork belly and daikon. The gravy is thick and flavourful and perfect over steam rice. Soft sweet daikon that literally melts in the mouth, so yummy! You can use pork ribs or even chicken drumlets in place of pork belly. But bare in mind to adjust the cooking time as needed. This is seriously very easy to cook and absolutely worth the effort (& calories 😋) so do give it a try! ————————- Serves 4 500g pork belly, cut into smaller pieces 300g daikon, peeled and cut into smaller pieces 1 red carrot, peel and cut into smaller pieces 1 large onion, chopped 400ml broth & water as needed Seasoning paste 5 garlic cloves 5 shallots 1 tbsp salted soy bean (or paste) Marinade 1 tsp salt 1 tsp pepper Seasonings 1 tbsp dark soy sauce 1 tsp brown sugar Method 1) Rub the pork belly pieces with salt & pepper. Leave it for 10 mins. 2) Blend the seasoning paste till smooth. Set aside for later. 3) Pan sear the pork belly without any oil till it’s slightly browned on the outside. 4) Add in the blended paste and sauté with the pork for a couple mins. Add in the chopped onion and toss well to combined. 5) Add in seasonings and broth (& water), stir well and bring it to a simmer. Cover to cook for 45 mins till the sauce thickens. Be watchful and don’t let the meat burn. 6) Once most of the liquid is cooked down, add in daikon and carrot pieces in and more water. Continue to simmer for another 20 mins till the daikon is soften and the sauce is thicken and reduced. 7) Serve up and enjoy with steam rice. Enjoy! —————
