Step 1
(Optional, can just buy ground pork) Using a cleaver, slice pork into small cubes and mince.

In a wok, sweat shallots and ginger. Then add mushrooms.

Add minced pork and cook until meat is lightly browned.

Deglaze wok with shaoxing wine, add rock sugar, light soy, dark soy, oyster sauce, white pepper, 5 spice, water, star anise, and MSG.

Step 5
Bring to a boil and simmer for 20-30 minutes until it reaches a saucy consistency. (Optional, but you can add some hard boiled eggs at this point to soak up the flavor)
Step 6
Serve over rice with an egg yolk (optional) and scallions.
