RECIPE 3: Cheesy Cajun Chicken Sliders
This is the final recipe in my new mini series, showing you how to make 3 dinners, feeding 4 people...from just 1 roast chicken!!
These are SO good - a little bit smokey and a little bit sweet..and very, very cheesy! They're on the table in under 20 minutes and they're a proper crowd pleaser

Makes 4 sliders
1 onion finely chopped
2 tbsp tomato puree
2 tbsp cajun spice
1 tbsp honey
220g shredded roast chicken
60g frozen sweetcorn
200ml water
4 brioche burger buns
80g grated cheddar cheese

Step 1
Heat the oven to 180C (fan)
Heat a drizzle of oil in a large non-stick pan. Add the onion and fry for 5 minutes.
Stir in the tomato puree, cajun spice and honey and fry for a further minute.
Stir in the roast chicken, frozen sweetcorn and half of the water.
Bring to the boil on a medium heat and simmer for for 2 or 3 minutes, breaking up the chicken gently with a wooden spoon as you stir. Simmer until the water is absorbed and the chicken is starting to break up.
Stir in the remaining water and season with salt and pepper. Simmer for another couple of minutes until the water is absorbed and the chicken is heated through.
Place the bottoms of the 4 brioche buns on a baking tray. Divide the chicken between them.
Top with grated cheese and place the lids on the buns.
Bake in the oven for around 5 minutes, or until the cheese is melted and the buns are beginning to crisp
