Instructions
Step 1
Preheat oven to 350* F. -- Convection oven to 300* F.
Step 2
CCP--Wash & sanitize hands & prep area. Wear gloves & discard per Facility HACCP guidelines.
Step 3
1. Mix melted margarine (1st listing), salt & lemon juice.
Step 4
2. Dip each fish portion into seasoned margarine.
Step 5
3. Dredge fish in flour, place close together in a single layer on greased pans.
Step 6
4. Mix melted margarine (2nd listing) & milk; pour over fish.
Step 7
5. Bake for 15 minutes until fish flakes easily & thermometer inserted in thickest part reads >145* F. for at least 15 seconds. Sprinkle with Lemon Pepper; Garnish with Parsley.
Step 8
CCP--Final Cooking Temperature must reach >165* F. for at least 15 seconds.
Step 9
CCP: Maintain 135*F or above.
Step 10
Serve with Tartar Sauce or another appropriate Sauce.
Step 11
CCP—Cool—Product must reach 70*F or less within 2 hours and 41*F or below within 4 hours. Total cooling time should not exceed 6 hours. Separate into shallow pans as needed for proper cooling. Cover, label & date.
Step 12
CCP--Reheat (one time only) to >165* F. for 15 seconds within 2 hrs.
