Instructions
Step 1
Pre-heat oven to 180°C (356°F).
Step 2
In a medium bowl, whisk together the sweetener, applesauce, vanilla and oil until well combined.
Step 3
Fold in the flour and baking soda and mix well to combine. Set the cookie dough in the fridge to firm up for at least 30 minutes, this will make it much easier to work with later on.
Step 4
In the meantime, make the cinnamon swirl by whisking together the applesauce, sweetener and ground cinnamon until well combined. Set aside.
Step 5
Once the cookie dough has firmed up, spread it across a sheet of plastic wrap. Using a rubber spatula, flatten the dough to form a rectangle. Spread the cinnamon swirl onto the rolled out cookie dough and roll up into a tight log. The cookie dough may be a little sticky so it's best to use a rubber spatula when working with it.
Step 6
Wrap the cookie dough log in the plastic wrap and freeze for 15 minutes to firm up.
Step 7
Once the dough is firm, cut into 3 pieces and set onto a lined baking tray.
Step 8
Bake for 10-12 minutes and let the cookies cool on the baking tray for a few minutes before transferring to a wire rack to cool completely.
Step 9
As the cookies cool, make the frosting by whisking together the cream cheese, 0 calorie icing sugar and vanilla extract until smooth. Transfer to a piping bag.
Step 10
Pipe the frosting onto the cooled cookies and enjoy!
