Sponge

255 mLwhole milk

110gapricot jam

3eggs
large

45gsalted butter
melted

1 ½ tspapple cider vinegar

1 tspvanilla powder

320gall purpose flour

130gdark brown sugar

3 tspbaking powder

1 ½ tspbicarb

salt

1zest of orange
Sauce
Instructions
Step 1
Mix wet ingredients with brown sugar
Step 2
Add dry ingredients over wet mix, sifting flour, bicarb and baking powder. Integrate completely but avoid overmixing.
Step 3
Transfer into greased tin and bake at 150C / Gas Mark 3 for 26-30 min
Step 4
Make the sauce in the meantime. Combine all ingredients in a pan and stir for 5 min on medium heat to reduce slightly.
Step 5
Sponge is done when lightly bouncy. Poke holes into sponge with a skewer and pour sauce. Let rest for 30 min for sponge soak up all the sauce.
Step 6
Serve warm (microwave 30 s) with vanilla ice-cream
