Creamy Chicken and Broccoli Pasta Bake

We’re starting as we mean to go on at casa Holborn, and I’ll be sharing our healthy January journey on here for you all to join along. I love this recipe because not only does it taste amazing, you can pop it in the slow cooker in the morning and finish it off when you get home. I allow the pasta to cook in the sauce but if you’re in a rush just stir in cooked pasta. Don’t forget to follow as I’ll be sharing several healthy family recipes each week, and save this one for later! Recipe Creamy Chicken and Broccoli Pasta Bake Serves 4-5 Ingredients 2 large (or 3 medium) sized chicken breasts 2 tsp garlic powder 2 tsp oregano 2 tsp paprika 1 tbsp butter 200g light cream cheese 70g grated cheddar cheese 800ml chicken stock 100ml double cream (heavy cream) 250g pasta bows (or any pasta of choice) 150g broccoli florets (fresh or frozen) 300ml semi skimmed milk

Instructions

Step 1
Mix together the garlic powder, oregano and paprika on a small dish and rub half of the mixture onto the chicken breasts
Step 2
Place the chicken breasts into the slow cooker and add the butter, cream cheese, double cream, and half of the chicken stock (400ml). Mix with a spoon and place the lid on top, cook on low for 3 hours
Step 3
Remove the lid then remove the chicken from the slow cooker and place to one side.
Step 4
Add the pasta, broccoli and cheddar cheese along with the milk and rest of the chicken stock to the slow cooker then mix in with the sauce and place the lid back on top and change the heat to the high for 30 minutes.
Step 5
Meanwhile use a sharp know to dice the now cooked chicken into bite size pieces
Step 6
Remove the slow cooker lid and add the chicken again, place the lid on top and cook for a final 30 minutes
