Open-faced avocado egg salad sandwich

To note, I did not measure when making so measurements are approx....and of course all ingredients are optional. After making it due to the avocado cheese...really wasn't technically needed. The lemon juice is for an almost egg florentine twist.

Instructions

Step 1: Hard boil eggs, peel & add to bowl

Step 2: Add avocado to eggs & begin to mash with back of fork. While mashing, add all seasoning & mayo. (You can either add some lemon juice now or ontop when done)

Toast bread. Once done add slice of cheese, put in microwave on 30 seconds but STOP timer at 15 seconds.

After microwaving, add egg/avocado mixture ontop. This is where if you didn't previously you can add a spash of lemom juice ontop.
