Whip up your favorite hot chocolate mix into these Hot Chocolate Cupcakes for the perfect winter evening treat! Top them with homemade marshmallow frosting and decorate them with mini marshmallows, mini candy canes and chocolate syrup to look like tiny mugs of hot cocoa.

Hot Chocolate Cupcakes

2 cupsall-purpose flour

2 cupsExtra Fine Granulated Sugar

2 teaspoonsbaking soda

1 teaspoonsalt

½ cuppowdered hot chocolate mix

¾ cupunsweetened cocoa powder

2eggs
large

1 cupmilk

1 cupvegetable oil

1 teaspoonvanilla extract

1 cupwater
boiling
Marshmallow Frosting

½ cupunsalted butter
room temperature

7 ouncesmarshmallow fluff

1 teaspoonvanilla extract

3 cupsConfectioners Powdered Sugar

Instructions
Step 1
Preheat oven to 325ºF.

Step 2
Whisk together flour, sugar, baking soda, salt, powdered hot chocolate mix, and cocoa powder.







Step 3
Next add in eggs, milk, and oil. Mix well. Stir in vanilla. Carefully mix in boiling water.





Step 4
Place cupcake liners into cupcake tray and fill liners halfway with batter.

Step 5
Bake in preheated oven for 30 minutes or until done. Let cool.

Step 6
To make marshmallow frosting, use an electric mixer to whisk together butter and marshmallow fluff until smooth. Mix in vanilla.




Step 7
Mix in powdered sugar, whip until light and fluffy.

Step 8
Pipe frosting onto each cupcake and top with mini marshmallows, mini candy canes, chocolate syrup and a dusting of cocoa powder
