Step 1
I a deep saucepan, sautee diced onions on medium heat until transparent. Add all other ingredients and bring to a boil. Reduce heat to low rolling boil and cover with parchment cartouche. Simmer until all liquid is gone. (Typically 1.5-2 hours. Stir frequently. Jam will thicken as it cools.
