Instructions
Step 1
Preheat oven 350°F. Generously grease a 2 qt. baking dish.
Chop leeks, onion, and parsley.
Step 2
In a large saute pan, melt butter. Add spinach, leeks, onion, and parsley. Cook on medium until spinach is wilted. Remove from heat.
Step 3
In a large bowl, beat eggs with a whisk. Add ricotta and feta. Mix well.
Step 4
Add the spinach mixture and blend. Add Parmesan and seasonings. Mix well and pour into prepared baking dish.
Step 5
Bake 40-45 minutes. Remove from oven and let stand before serving.
