Instructions
Step 1
Add the heavy cream to a pan then heat on medium low until it starts to simmer . Add most of the Parmesan reserving some for the pasta then let it cook a few minutes until it gets thicker . Season with salt and lots of black pepper
Step 2
Add fresh tagliatelle ( or other pasta ) to a pit of salted boiling water and cook until nearly the end of the cooking time then toss it into the creamy sauce with a little pasta water and finish cooking it for another minute so the sauce gets nice and sticky and coats the pasta . Adjust the seasoning then serve with more Parmesan
