Instructions
Step 1
Start by bringing a large pot of salted water to a boil. Add the pasta and cook it according to the package instructions. Before draining, remember to set aside at least 1/2 cup of pasta water for later use.

In a saucepan over medium heat, heat the olive oil. Add the minced garlic and tomato paste, and cook for approximately 4 to 5 minutes until the tomato paste deepens in color from bright red to reddish brown, removing its acidity in the process.

Next, pour in the heavy cream, stirring until well combined, and let it simmer for about 2 to 3 minutes.
Step 4
Now, incorporate the red pepper flakes, dried oregano, salt, and black pepper to your taste, and give it a good mix.
Step 5
Add the grated parmesan, butter, and 1/2 a cup of pasta water, stirring until the sauce becomes smooth and creamy. Adjust the consistency by adding more pasta water if desired, though 1/2 a cup usually does the trick for me.
Step 6
Once the sauce reaches your desired consistency, add the cooked pasta to the saucepan, tossing until evenly coated. For an extra touch, sprinkle with more chili flakes and burrata cheese, if desired.
