Spicy Vodka Rigatoni (without Vodka)

This pasta is rich, creamy, spicy, cheesy and delicious. So, Is there any other good reason that I can't make it? I have included all the ingredients and instructions below.

Instructions

Step 1
In a large saucepan, heat up the olive oil, add onion and cook until translucent. Add garlic and cook until soft. Add tomato paste and cook around 3/4 until it appears darker in colour.
Step 2
Add Chilli flakes, Black pepper and salt (to taste as Parmesan will be salty too) . Give it a mix.
Step 3
Turn the heat to the lowest and, Add in the double cream and whisk until incorporated. Simmer for about 2 to 3 minutes.
Step 4
Cook pasta separately. I used rigatoni but you can use shells/penne or any pasta you like. When the pasta is done, save 60 ml or 1/4 cup of the pasta water before draining.
Step 5
Add the grated Parmesan cheese and mix will well.
Step 6
Add the butter in sauce. Stir over a medium heat till the butter has melted and sauce is creamy.
Step 7
Add pasta water and the cooked pasta to the sauce.
Step 8
Toss it well until well coated. Add more salt and pepper to taste.
Step 9
Top with a sprinkling of parmesan cheese, basil, parsley and chilli flakes to serve.
