Instructions
Step 1
Preheat oven to 220°C. Lightly grease a baking tray.
Step 2
Place almond meal, sugar and butter in a food processor and process until a thick paste forms. Add 1 egg and vanilla, and pulse. Add flour and pulse until well combined. Set aside.
Step 3
Cut (or leave as a square) 2 (or 3 if leftover almond cream) large rounds from pastry sheets.
Step 4
Place 1 round on prepared tray. Spread almond cream over pastry, leaving a 1cm border.
Step 5
Beat remaining egg and brush over border. Top with remaining pastry round and use a fork to pinch edges to seal. Chill for 10 minutes.
Step 6
Brush top of pastry with remaining egg and bake in oven for 15 minutes, or until pastry has risen and is golden.
Step 7
Remove from oven, dust with icing sugar and serve.
