Step 1
Place the olive oil in a saucepan or deep frypan over medium heat. Add the bacon, onion, garlic and mushrooms and cook, stirring, for 4 minutes or until the onion has softened.
Step 2
Add the rice and a small amount of the stock at a time, stirring until absorbed. Keep adding more stock until absorbed and the rice is just tender.
Step 3
Stir in the grated Parmesan and the sour cream. Serve in bowls and sprinkle with parsley and extra shaved Parmesan.
