Instructions

Dough

Step 1
Using stand mixer with knead attachment, add dough ingredients in order, slightly mixing after each addition.
Step 2
Knead for 5 min
Step 3
Let dough rest for 5 min
Step 4
Then continue to knead for an additional 3-5 min, or until dough passes the window pane test (see through dough when stretched without ripping/tearing)
Step 5
Grease a large bowl, put the dough into the bowl, then flip the dough so both sides are greased.
Step 6
Lightly cover to rise in a warm place until doubled
Step 7
Prepare filling, set aside
Step 8
Once dough has doubled, put dough on greased countertop (use silicon mat, no grease needed)
Step 9
Hand stretch to rectangle, then use roller to 17.5" long by 12" wide.
Step 10
Smear with softened butter, then spread on brown sugar mixture. Hand press down, then use rolling pin for a final press.
Step 11
Use pizza cutter to cut long strips 1-2" wide. Roll up each strip, wetting end of each strip, and using a fork tine to "scrap" the end of the dough into the roll, so that it stays secure

Put 6 rolls into a greased 9x13 pan. Let rise in warm area until double in size (45-90 min)
Step 13
Preheat oven to 350 degrees. Addition: pour 1/4 c warmed heavy cream over rolls. Bake covered with foil first 15 min. Remove foil, and bake an additional 10-20 min, or until lightly browned with internal temp of 195 degrees.
