Instructions
Step 1
1. Preheat the oven to 400°F.
Step 2
2. Peel, wash, chop and dice all the vegetables and chicken about the same size.
Step 3
3. In the bottom of the casserole dish combine together the olive oil, all the seasonings and spices, balsamic vinegar and tomato sauce. Whisk together really well.
Step 4
4. Next add in the diced chicken, and all the vegetables. Mix everything together until well combined. Add the cherry tomatoes and hot peppers on top.
Step 5
5. Cover it with a wet piece of parchment paper.
Step 6
6. Bake for one and a half hour. When done, garnish with parsley and enjoy either with rice or with bread.
