Instructions

Step 1
Preheat oven to 375 degrees

Cut chicken breast into bite size cubes

Cut potatoes into cubes slightly smaller than the chicken, half cherry tomatoes and green beans, slice red pepper into thin strips

Place all on a baking sheet, drizzle with oil, salt, pepper and Italian seasoning and bake for 25-30 minutes

After 25-30 minutes of baking, pull the pan out and top with however much goat cheese you want. Return to the oven for 5 minutes

Remove from oven, drizzle with balsamic glaze and serve hot!
