Step 1
r. Melt the butter in a large saucepan over medium heat, then add the
onion and garlic. Cook until soft and fragrant, about 3 to 5 minutes,
then add the diced carrots, stirring to coat with butter.
2. Sprinkle the flour into the pan and stir to be sure there are no clumps
remaining. Add the chicken and beef broth, and cook until the carrots
are soft, about r5 minutes. Puree with an immersion blender (or in
batches in a regular blender) until it has a nice, thick consistency,
adding with extra broth if needed to get your preferred consistency.
Season with salt and pepper to taste.
