Crab bisque is a rich and creamy and flavorful soup that's perfect for an easy lunch or a quick weeknight supper yet special enough for a h meal. Serve it up with some crusty bread and a salad, and you have something delicious and easy on the table in less than 30 minutes.

Step 1
In a large pot heat butter. Add onion, celery and garlic and cook until soft, about 5 minutes. Season with salt, pepper, and Old Bay, then stir in tomato paste. Cook until tomato paste coats vegetables and begins to caramelize on bottom of pot. Add flour and cook until absorbed, 1 minute more.
Step 2
Pour in stock, wine and bay leaf. Bring to a boil and reduce to a simmer, covered for 20 minutes.
Step 3
Remove bay leaf and puree soup with an immersion blender until smooth. Return low heat and stir in heavy cream and half of the crab meat. Cook until just warmed through, about 5 minutes.
Step 4
Serve in bowls with extra crab meat and chopped parsley
