Spiced Root Cake - Elder Scrolls
Sometimes the humblest vegetables can shine in unexpected ways, and there's
no better example of that than a slice of delicious cake. Since many of Tamriel's
roots are best left to skilled alchemists, forgo the mandrake, corkbulb, and
trama root in favor of the more familiar and safer carrots and parsnips.

Ingredients
8 servings
½ cupbutter
plus more for pan
½ cupcoconut sugar
½ cupmolasses
½ cupapplesauce
1 tspvanilla extract
1 tspNord spices
1 tspground ginger
2 cupscarrot
shredded, or parsnip, can use food processor
½ cupdried currants
or cranberries
1 tspbaking soda
½ tspsalt
2 cupsflour
1 cupcream cheese
tofu, vegan
¼ cupbutter
softened
¾ cuppowdered sugar
2 Tbspagave syrup
vanilla extract
salt
Instructions
Step 1
To make the cake:
I. Preheat the oven to 350"F and lightly butter the bottom and sides of
an 8-or 9-inch round cake pan. Lightly dust with flour, then tap out
any extra.

2. In a medium bowl, cream together the butter and brown sugar until light and fluffy. Mix in the molasses, eggs, vanilla, and Nord spices. Stir in the grated carrot and dried currants, making sure everything is evenly distributed. Mix in the baking soda, salt, and flour until you have a nice thick batter. Pour this into the prepared pan and smooth over the top. Bake for about 30 minutes, until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pan for at least 15 minutes before flipping out of the pan onto a rack to finish cooling.
Step 3
To make the frosting: 3. While the cake bakes, beat the cream cheese and butter together in a medium bowl until they are one smooth consistency. Gradually add in the powered sugar, followed by the honey, vanilla, and salt. When the cake has cooled completely, spread the frosting over the cake. Can decorate with a pinch of Nord spices.
