Boterkoek or Dutch Butter Cake

It is a typical Dutch treat and in Holland we call it a boterkoek. Boter equals butter, and the word 'koek' translates into cake. But texture-wise it is not a cake at all. So a better translation would be cookie, just a very big one.

Instructions
Step 1
Butter a baking dish (9×9) and preheat the oven to 350 degrees F.
Step 2
Mix butter, sugar and vanilla extract until light.
Step 3
Add 1/2 egg and a pinch of salt and mix again, then add flour.
Step 4
Mix until you have a smooth dough.
Step 5
Transfer dough into the baking dish form and press it down. Level it and smooth out the top, with you hands or the back of a spoon or an offset spatula.
Step 6
Beat 1/2 egg and brush the top of the cookie.
Step 7
Use a knife or fork to carve the top of the cookie.
Step 8
Bake it in the oven for approx. 30 minutes.
Step 9
Allow to cool and cut.
