Instructions
Step 1
In a skillet on medium-low heat, saute onion in olive oil and butter. Stir frequently.
Step 2
Allow to reduce 45-50 minutes.
Step 3
At the 25 minute mark, add garlic, wine, vinegar, thyme, salt and pepper.
Step 4
Add pasta, beef broth and Worcestershire until pasta is covered. Stir and cover with lid.
Step 5
Allow pasta to cook, stirring occasionally.
Step 6
Once al dente, add heavy cream and mix.
Step 7
Add shredded gruyere 1/4 cup at a time.
Step 8
Optional: put pasta into a ramekin, top with more gruyere and broil until browned on top.
