Step 1
Add rice flour the zest of two limes baking powder and sweetener of choice eg monkfruit stevia or ( 40 grams of sugar if using sugar ) . Whisk to combine

Step 2
Add the coconut milk ( use light coconut milk if you prefer) mix until smooth then grease a muffin tray and pour a heaped spoonful into each one ( makes 18 approx)

Bake in a preheated oven at 180 c for about 15 minutes or until golden . Enjoy
