These Sweet and Spicy Meatballs are made using 5%-fat pork mince and served in a deliciously sticky sauce. At first glance, this recipe might seem like it has a lot of ingredients but we promise it’s worth it, as all of the spices and sauces combine perfectly to create a dish that’s ideal for a Friday night fakeaway! This is a moderately spicy recipe, but if you like your food hotter then just add an extra tablespoon of sriracha sauce or teaspoon of chilli powder.

Ingredients

For the Meatballs
500g5%-fat minced pork

½ tspgarlic granules

½ tsponion granules

½ tspground ginger

¼ tspsalt

½ tspfreshly ground black pepper

1egg
medium, beaten
For the Sauce

0.5red pepper
deseeded and diced

0.5green pepper
deseeded and diced

2garlic cloves
peeled and crushed

5 cmroot ginger
piece, peeled and finely grated

½ tspgarlic granules

1 tspground ginger

3 Tbsprice vinegar

3 Tbsplow-sodium light soy sauce

3 Tbsphoisin sauce

3 Tbsphoney

3 Tbsporange juice

2 Tbspreduced-sugar ketchup

2 Tbspsriracha sauce

1 tspchilli powder

200gbasmati rice
or pasta
Instructions
Step 1
Preheat the oven to 200ºC (fan 180ºC/gas mark 6) and spray a baking tray with low-calorie cooking spray.
Step 2
Combine the meatball ingredients in a mixing bowl, then take small amounts of the mixture in your hands and roll into twenty even-sized meatballs. Place the balls on the greased baking tray and bake in the oven for 15 minutes until they are slightly browned.
Step 3
While the meatballs are cooking, spray a frying pan with low-calorie cooking spray and place over a medium heat. Add the diced peppers and cook for 3 minutes until they begin to soften, then add the fresh garlic and ginger and cook for a further 2 minutes.
Step 4
Combine the rest of the sauce ingredients in a small bowl and add to the pan with the peppers. Reduce the heat to low and simmer for 5 minutes until the sauce is starting to thicken. Add the baked meatballs to the pan and continue to heat for 5 minutes until the sauce is thickened and the meatballs are coated.
Step 5
Serve sprinkled with sliced spring onion and your choice of accompaniment.
