Cauliflower 'Couscous' Salad 🥗

Instructions

Step 1
Cut dates into strips and slice spring onions then place both in a large serving bowl.
Step 2
Place bell peppers in a food processor or my robot chef then chop 6 sec/speed 4. Add to serving bowl with dates.
Step 3
Place mint, cauliflower florets, oil, vinegar, lemon zest, cinnamon, & chilli flakes in the food processor or my robot chef then chop 15 sec/speed 5 while stirring with spatula through hole. Add to serving bowl and combine well.
Step 4
Garnish with leaves from remaining mint sprig before serving.
