Instructions

Step 1
Add the oil to a large pan over medium heat. Once hot, add the shallots, sweet potatoes, and bell peppers. Sauté for five minutes. Move the vegetables to the side of the pan.
Step 2
Add the turkey to the pan and cook for about three minutes, breaking it up as it cooks.
Step 3
Add the chickpeas, tomatoes, and chilli powder to the pan and stir to combine everything.
Step 4
Cover and lower the heat to medium-low. Cook for ten minutes, stirring occasionally.
Step 5
Divide the turkey mixture evenly between plates. Garnish with the green onions.
