Step 1
Preheat oven to 375°F (190°C)

Carefully cut along side of each chicken breast to create pocket, ensuring not to cut all the way through

Equally distribute the roasted peppers, spinach and mozzarella cheese inside the chicken breasts, stuffing them

Use toothpick to secure opening

Mix olive oil, garlic powder, Italian seasoning, salt and pepper in a small bowl.

Brush the mixture over the chicken breasts, coating both sides

Place the chicken in a baking dish and bake 25-30 minutes, or until chicken is thoroughly cooked
