Instructions

Step 1
Trim ends of squash and Cut into 4 even rings, remove seeds
Step 2
Brush both sides with oil, season with salt and pepper
Step 3
Bake 450 on sheet pan flipping 1/2 way until squash easily flakes with fork but isn't too soft (don't overcook) 20-25 mins
Step 4
Combine cottage cheese, basil, red pepper flakes, 1/2 mozz, 1/2 parm, add remaining 1/2 tsp salt and some black pepper in large bowl. Increase oven to a broil. Scrape strands to center of squash to make nest
Step 5
Divide cottage cheese mix between each ring, top with remaining parm and mozz
Step 6
Broil until cheese is melted 2-4 mins
Step 7
Top with basil
