spaghetti squash
This is my favorite way to cut spaghetti squash to get long strands that actually look like spaghetti. You can stuff it with so many combinations like this creamy alfredo-like sauce made with butter, cream cheese and mozzarella cheese. 🍝
INGREDIENTS
1 spaghetti squash
2 tablespoons butter
½ teaspoon salt
½ teaspoon black pepper
4 tablespoon cream cheese
1 cup mozzarella cheese
1 cup baby spinach
INSTRUCTIONS
1. Preheat oven to 400°F degrees. Fill a baking sheet with about 1-inch of water.
2. Cut spaghetti squash in half crosswise, scoop out the seeds and discard. Place cut side down in the prepared baking sheet and bake until tender, about 45 minutes
3. Use a fork to pull apart the strands of squash that look like spaghetti and set half them aside. Season the spaghetti squash halves with salt and pepper, and then add butter, cream cheese an half the mozzarella cheese. Stir it together to combine. Then add the spinach and reserved spaghetti squash, season with salt and pepper and top with the remaining mozzarella cheese.
Broil for 3-4 minutes until the cheese is bubbly and melted. Enjoy immediately.
