Grilled King Salmon with Meyer Lemon Relish

Ingredients

1 tsplemon zest
½ cuplemon segments
finely chopped, divided

¼ cupshallot
finely chopped

2 ½ tspkosher salt
divided

½ tspgranulated sugar

⅓ cupextra-virgin olive oil
plus 2 Tbsp divided

¼ cupcapers
drained, roughly chopped

¼ cuppitted Castelvetrano olives
chopped

3 Tbspfresh flat-leaf parsley
chopped, divided

½ tspAleppo pepper
or 1/4 tsp

crushed red pepper

cayenne pepper

6 x 5 ozking salmon fillets
skin-on

2 tspfresh thyme leaves

¼ tspblack pepper
Instructions
Step 1
1. Combine lemon segments, shallot, 1 teaspoon salt, and sugar in a medium bowl. Gently whisk in ⅓ cup olive oil; stir in capers, olives. 2 tablespoons parsley. Aleppo, and cayenne. Set aside.
Step 2
2. Preheat grill to very high (500°F).
Step 3
Brush salmon with remaining 2 tablespoons olive oil; season with thyme, pep-per, lemon zest, remaining 1 tablespoon parsley. and remaining 1½ teaspoons salt.
Step 4
Grill salmon, skin sides down, covered. until skin is golden and crispy, about 3 minutes. Flip fish, and grill, uncovered, to desired degree of doneness, 2 to 3 minutes for medium-rare.
Step 5
3. Transfer fillets to dinner plates, and top evenly with relish.
