Bolognese sauce
Step 1

Prepare by finely dicing the carrots and celery. Dice the onion. Put the carrot and onion in the same bowl, then celery in another. Keep the cutting board out for the garlic later.



Step 2

Begin browning the minced meat with a little bit of oil in a frying pan on medium-high heat. Break it down into small chunks with a spatula.



Step 3

Right after you have started browning the meat, start frying the onion and carrots in a large pot with oil on medium heat. Stir occasionally in between dividing the meat with a spatula.



Step 4

When the meat has just fully browned, pour it into the pot. Finely chop the cloves of garlic and add it to the pot. Add the celery and chilli powder now too. Stir occasionally and keep frying for another 5 minutes. This is a good time to clean the cutting board.



Step 5

Add the canned tomatoes, star anise and wine or fish sauce. Stir it all together, then let it simmer with a lid on low-medium heat until you have the desired consistency (3~4 hours). Stir occasionally. If you need to make it faster, you can take the lid off. Now is a good time to clean up all the other ingredients.

20 minutes before the sauce is finished, start boiling water in a pot for the spaghetti. Boil the spaghetti for the duration recommended on the pack.

Step 7
Drain the water from the spaghetti, then mix in a table spoon of butter with a fork (or whatever you will take the spaghetti with when serving).
