Ingredients

400gminced meat
usually rose veal or beef
2 TbspGrana Padano cheese
grated
100 grbread
soaked in milk, drained and squeezed, not soggy
1egg yolk
1 sprigparsley
chopped
1clove of garlic
plain flour
Salt
nutmeg
to taste
For the sauce
Instructions
Step 1
Mix the minced meat with the egg and all the other ingredients and season with a good pinch of salt, pepper and nutmeg. Make sure the garlic is finely grated and the soaked bread is squeezed. Knead well until smooth. It should be soft but firm
Step 2
Now start with the making of the meatballs by rolling little quantities of meat mix in the palm of your hands. You choose the size you like the most. During the process a little drop of oil on your palms could help.
Step 3
Heat a drizzle of oil in a frying pan, dust the meatballs with flour (optionally) and add them to the pan, increase the heat, add the butter and toss the meatballs gently around the pan. When they are colored and browned all around pour the wine in, let the alcohol evaporate for 1 minute and add the tomato sauce and basil leaf, mix well and simmer covered with a lid for about 20/30 minutes maximum.
Step 4
Enjoy with crusty bread, a drizzle of oil and grated cheese.
