Instructions

Step 1
Preheat your grill or grill pan to medium-high heat.

In a food processor, combine the chopped cilantro, parsley, minced garlic, ground cumin, paprika, ground coriander, and cayenne pepper. Pulse until it forms a coarse paste.

With the food processor running, slowly pour in the lemon juice and olive oil until the mixture is well combined and forms a smooth sauce. Season with salt and pepper to taste.

Thread the halloumi cubes and assorted vegetables onto the soaked wooden skewers, alternating between the cheese and vegetables.

Brush the vegetable and halloumi skewers generously with the chermoula sauce, coating them evenly.

Place the skewers on the preheated grill or grill pan and cook for about 3-4 minutes per side, or until the halloumi is golden brown and the vegetables are tender, with grill marks.

Once cooked, remove the skewers from the grill and serve immediately, garnished with extra chopped cilantro or parsley if desired.
