Instructions
Step 1
Set oven to 425°F
Step 2
Peel and wash potatoes
Step 3
Chop potato in half and cut length-wise, repeat for all potatoes
Step 4
Put slices in bowl, lather with olive oil and use spoon to separate and mix oil throughout
Step 5
Shake layer of kosher salt on top of potatoes, mix around, add another layer of oil and salt
Step 6
Put parchment paper in large glass Pyrex dish
Step 7
Pour potatoes in dish, mix around evenly to not clump slices together
Step 8
Put in oven for 1 hour, mixing every 20 minutes until crispy golden brown
