Instructions
Step 1
Preheat oven to 350 F.
Step 2
In a medium bowl, combine the balsamic vinegar and brown sugar.
Step 3
Add the raspberries and thyme to the bowl and stir until they are covered by the liquid. Set aside for 5 minutes.
Step 4
Use your hands to mix 1/8 cup almonds into the goat cheese, then form the goat cheese into a disc.
Step 5
Top with the remaining 1/8 cup almonds.
Step 6
Place the goat cheese in the center of a pie plate or oven-safe serving dish.
Step 7
Arrange the raspberry mixture around the cheese.
Step 8
Bake for 30 minutes.
Step 9
Serve hot with crackers or bread.
